• We started with single-origin goat cheese from local West Meadow Farm (Canajoharie)
• Then we mixed in 3 varieties of imported sea salt & ‘brined’ for at least one week
• When they were ready, we formed the cheese into 5 oz rounds and sprinkled with Herb d’Provence or Fresh Chopped Garlic Chives (from Philia Farms) – we left left some plain for those who like it that way.
• Almost ready – we carefully placed the chévre into the freezer for 5 minutes to set
• Last step: we vacuum sealed, labelled the chévre and put them into the cooler for YOU to purchase and enjoy
